When I am craving a rich piece of cake, the first place I turn is Taste. The chef was born and trained in France and treats baking like an artistic science. Taste is a bit pricey, but the quality and flavor are well worth it. They have tasty options for lunch, such as beet salad, sautéed root vegetables and chicken satay. They also offer a plethora of rich cakes and pastries, of which, there are generally 4 or 5 that are made without gluten (but most have butter). They also make a fantastic cappuccino and have a nice tea selection.
Another place to enjoy a deliciously rich slice of cake is at La Glace. They typically have one or two gluten free cakes by the slice. Their signature tea is fantastic as well.
Note: If you come during peak hours, expect to wait in a line outside. Also, they do not generally have dairy free options.
A good option for a a guaranteed gluten free bite is Vita Boost in Torvehallerne (the farmers' market). They only serve gluten free products, so you don't have to worry about cross contamination. They are actually a juice and smoothie bar but offer gluten free paninis and muffins. In fact, it is the only place in Copenhagen that I know of where you can find a gluten free sandwich.
Palæo offers further gluten free options in two central locations at Torvehallerne and on Pilestrade, as well as a new location in Frederiksberg Centret. They make great, fresh juices and homemade almond milk for cappuccinos. Their whole menu is gluten free, so there is no fear of cross contamination. The dishes there are creative and packed with veggies, like risotto made from cauliflower and spaghetti made of zucchini. You can get wraps - where the wrapper is a plain, flat omelet - filled with various meats and/or vegetables. They also sell a gluten free bread that consists solely of nuts, seeds, oil, salt, and eggs.

Café Lækkerier is a trendy café and coffee joint in the city center and is known for their cakes. Luckily for us, they try to make a gluten free option daily. Call ahead to be sure.
If you are looking for a cozy café or a beautiful place to sit outside on a quiet street and enjoy a chai soy-latte, look no further than Kleist Kaffe. Their 'light lunch' is gluten free, but it is designed to be accompanied by bread, so you might want to bring your own. They typically have a delectable gluten free cake option as well. Call ahead to be sure.
42 Raw is a fantastic option for gluten free food. Most of their items are naturally gluten-free, and the staff is quite knowledgeable about food allergies. They have four different locations now, including downtown and in Frederiksberg Centret (I have only included the ones in greater Copenhagen). Their salads are fresh and colorful, and their juices are top-notch. I would recommend the "lasagne". Yummy.
